Fettucine Carbonara

250 g fettucine
1/2 tsp salt
100 g chicken meat ~ sliced
150 g mussels
250 g prawns with shells intact
2 cloves garlic ~ minced
30 g butter
200 ml cream
1 egg ~ beat lightly
2 tbsp grated cheddar cheese
1 tbsp butter

Seasoning


½ tsp salt
½ tsp chicken stock granules
1 tsp freshly ground black pepper
2 tbsp Thai sweet chilli sauce

1. Cook fettucine according to the packet instruction. Drain and set aside.
2. Combine egg, cheese and seasoning in a bowl. Set aside.
3. Melt butter in a non-stick saucepan. As soon as it begins to foam, add garlic and chicken meat and fry over gentle heat until the chicken turned opaque. Remove chicken and reserve remaining melted butter in the pan.
4. Add prawns and musseld and stir-fry well to cook. Remove and set aside.
5. Add cream and into unwashed pan set over a gentle heat until it comes to just a low boil. Pour over egg mixture. Blend well to cook the eggs.
6. Pour sauce over pasta. Toss well. Serve immediately with prawns, mussels and chicken.

Apple Yoghurt Roll

Sweet Bread

160 g bread flour

1 tsp instant yeast

A pinch of salt

¼ tsp bread improver ~ optional

¼ tsp bread softener ~ optional

2 tbsp sugar

¾ cup milk ~ ± ¼ cup, depends on the type of flour

1½ tbsp butter ~ softened

Sift together bread flour, salt, bread improver & bread softener. Add in instant yeast and sugar. Pour milk in a mixing bowl. Add in the flour mixture bit by bit and knead until dough is formed. Add in butter and continue kneading until soft and elastic dough is formed. Cover the bowl of the dough with a clean towel and leave it to rest for 45 minutes or until double in size (to make the process faster, place the bowl of dough in an oven that is heated up to 45oC). Punch down the dough to remove trapped air. Scale and cut the dough into 40g balls. Roll the ball into rectangle. Spread some yoghurt filling onto the dough and top it with apple filling. Roll the dough into a swiss roll. Cut it into two and put it side by side in a muffin tin. Repeat with the remaining dough. Cover and leave them to prove again for 45 minutes or until double in size. Bake at 180oC for about 15 minutes. Brush the freshly baked breads with butter and ready to be enjoyed.

Yoghurt filling

50 g strawberry yoghurt

1 tbsp instant custard

Mix it together and put aside.

Apple filling

2 medium sized apples ~ cored, skinned & diced

3 tbsp sugar

A pinch of salt

3 tbsp water

1 tsp lemon juice

2 tbsp cornflour mix with 2 tbsp water

1 tbsp butter

Mix all the ingredients together in a pan and simmer until the mixture thickens. Leave to cool.

Palm Sugar Pannacota

½ cup fresh milk 1 cup fresh cream 20 g palm sugar 3 tsp gelatin powder mix with ¼ cup water

1. Put in fresh milk, fresh cream & palm sugar into a pot. Bring to the boil & stir. Once boiled, remove from heat. 2. Put in the gelatin mixture & stir until the gelatin dissolves. 3. Prepare a bowl with some ice cubes in it and put the pot of pudding mixture on top of the ice cubes. Stir until the mixture is cooled. 4. Transfer into small cups or ramekins & refrigerate for 1 hour. The pudding will set by then. You'll get about 4 ramekins of pudding with this mixture.

Syrup

40 g palm sugar ¼ cup water

Dissolve the palm sugar in the water & pour onto the cold pudding.

Classic Waffle

3 large eggs
1 1/3 cups milk
1 3/4 cups flour
1 tbsp baking powder
1 tbsp sugar
1/4 tsp salt
6 tbsp melted butter ~ cooled

1. Preheat the waffle iron or you can also use a sandwich maker. In a bowl, whisk the eggs and then whisk in the milk. Set aside.
2. In another bowl, sift together the flour, baking powder, sugar and salt. Pour in the egg mixture and whisk to combine. The mixture will be lumpy. Pour in the butter and stir until combined. Do not overmix.
3. Ladle about 1/4 cup batter and pour it on the waffle iron or sandwich maker. Repeat with the remaining batter. 4. Serve with icecream, butter, jam, honey, maple syrup or anything to your liking.

Cream Puff

Choux Pastry

Adapted from : myresipi.com

200ml water
90g butter at room temp
150g plain flour ~ sifted
4 eggs ~ whisked lightly

How to


1. Heat oven to 200oC.

2. Boil the water & butter in a pot. Turn off the heat.

3. Quickly add in flour & stir. Put the pot back on medium heat & cook until a small layer formed. Turn off the heat.

4. Quickly add in the eggs & stir until the mixture becomes soft dough.

5. Pipe the dough onto the oven plate. The diameter of the puff should be about 5 cm.

6. Push the top of the dough lightly to flatten it a bit.

7. Spray or sprinkle the cream puff surface with water.

8. Bake in the oven for 15 minutes. Then reduce the temp to 180oC and continue baking for another 25 minutes.

9. Let the puffs cool before putting the custard cream.

Filling

1 tbsp plain flour
1 tbsp custard powder
4 tbsp sugar
1 cup fresh milk
1 large egg
1 tbsp butter

How to


1. Put flour, custard powder & sugar in a sauce pan. Add in 1 or 2 tbsp of milk. Whisk until no lump remains.

2. Add in the egg and continue whisking. Then add in the remaining milk & stir.

3. Cook the mixture inside on medium heat until it becomes thick. Always stir.

4. After the mixture is thicken, add in the butter & stir. Leave to cool.

Minced Beef Curry Puffs

Pastry

2 cups all purpose flour
1/2 cup butter/margerine/shortening
enough cold water mixed with a pinch of salt

1. Sift flour into a big bowl. Add in butter and mix until the flour resembles bread crumb.
2. Add in water bit by bit and knead until a small dough is formed.
3. Leave the dough to rest while preparing the filling.

Minced beef filling

1 clove garlic ~ pounded
1 cm ginger ~ pounded
1 cup minced beef
1 1/2 cups potatoes ~ diced
1 cup onion ~ diced
a little bit of water
salt to taste

1. Saute garlic and ginger until fragrant.
2. Add in minced beef and stir for a few minutes.
3. Add in diced potatoes and a little bit of water. Wait until the potatoes are cooked.
4. Add in diced onions and stir until the onions are soften.
5. Season with salt.
